The same cake serves two completely different numbers

Here is the thing nobody tells you when you are ordering a cake. There is no single answer to "how many does this serve." There are two, both of them standard, both of them published on the same chart, and they are nowhere near each other.

A wedding slice is 1 inch by 2 inches across the face of the cake. A party slice is 1.5 inches by 2 inches. That sounds like a rounding difference. It is not. Run a three tier round cake of 12, 9, and 6 inch tiers through both standards and you get 97 servings the wedding way and 65 the party way. A third of the cake disappears in the cutting, and the cake never changed.

So when a bakery tells you a cake serves 100, the useful next question is not "are you sure." It is "which slice size is that?" A customer who is quoted a wedding count and then hands the knife to an uncle who cuts generously is going to run out, and everyone will blame the bakery.

How this calculator works

Most cake serving tools quote a chart at you. This one does the geometry, shows the arithmetic, and then compares its answer to the chart the industry actually uses, so you can see where they agree and where they do not.

Square and rectangular pans get a grid. A slice is a rectangle and so is the pan, so we lay the slices out both ways round and keep whichever orientation fits more. Round pans get rings. This is the part people get wrong: a round wedding cake is not cut into wedges. It is scored in a circle 2 inches in from the edge, that outer band is cut into slices of the standard width, and then the knife moves in another 2 inches and does it again. That is why a round cake yields so many more slices than the eight or twelve wedges you would cut at home.

Everything rounds down, ring by ring and row by row rather than once at the end, because the leftovers at the end of one ring do not add up into an extra slice at the end of the cake. And where our geometry and the published chart disagree, we take the lower of the two. Promising slices a cake cannot produce is the only failure that matters here.

The formula

Rectangular pan: servings = floor(length ÷ slice depth) × floor(width ÷ slice width)
Round pan: servings = ∑ floor(ring area ÷ slice footprint), rings of 2 in from the edge inward
Slice footprint = 1 × 2 = 2 sq in (wedding) or 1.5 × 2 = 3 sq in (party)

Slice depth is 2 inches in both standards. Slice width is 1 inch for a wedding serving and 1.5 inches for a party serving. Ring area is π × (outer radius² minus inner radius²), the same pan geometry the pan size converter uses, so a 9 inch round is 63.62 square inches on both pages and always will be.

Worked example: a three tier round cake

A classic stack of 12, 9, and 6 inch round tiers, each 4 inches tall.

Areas: 113.10 + 63.62 + 28.27 = 204.99 square inches of cake face.

Wedding slices (1 x 2 in). The 12 inch tier rings out as 31 + 18 + 6 = 55. The 9 inch gives 21 + 9 = 30. The 6 inch gives 12 plus 1 from the center = 13, but the published chart prints 12 for a 6 inch round, so we take the lower number: 12. Total: 97 wedding slices.

Party slices (1.5 x 2 in). The same three tiers give 36 + 20 + 9 = 65 party slices.

The gap: 32.99 percent of the servings vanish between one standard and the other, on one cake, with nothing changed but the width of the knife stroke.

And if you save the top tier for your first anniversary, as most couples do, the wedding count that actually reaches a plate drops from 97 to 85. Every published chart counts that tier. A freezer does not.

What happened when we checked our grid against the famous chart

The reference nearly every US bakery prices from is the Wilton Cake Baking and Serving Guide, and it is where the two slice sizes at the top of this page come from. We ran our own grid against it cell by cell, and the results are more interesting than we expected.

The square pans reproduce perfectly. All six sizes, both columns, twelve numbers, exact: a 6 inch square is 36 square inches and the chart says 18 wedding servings, which is 36 divided by 2. A 16 inch square is 256 square inches and the chart says 128. Every square cell in the wedding column is the pan area divided by exactly 2.00 square inches. That is a lovely thing to discover. It is not folklore, it is arithmetic, and it tells you the chart was built the same way we are building this.

The round wedding column is close. Our rings land on the chart exactly at 8 and 10 inches and come in 1 to 3 servings under it at 9, 12, 14, and 16. Those small gaps are the cost of flooring each ring separately, and we keep them rather than argue with them.

The round party column is where the two methods part company. A 14 inch round is 153.94 square inches, and the chart prints 63 party servings. Getting 63 pieces out of that cake means slices of 2.44 square inches, about 1.22 inches wide rather than the 1.5 inches a party serving is defined as. Across every round size from 8 inches up, the party column works out to an average slice of 2.64 square inches rather than 3.00. That is the difference between cutting a round cake as wedges and cutting it as concentric rings, which is how it is actually done at the table, and rings are a genuinely harder shape to tile. We print the ring number because it is the one you can cut. If your bakery quotes the chart number, they are not wrong, they are cutting narrower, and now you know which to ask for.

The sheets run the other way: our grid fits more slices into a rectangle than the chart claims, by 4 to 10 percent on the wedding column. A sheet cake is baked in a pan with sloped sides and the edges get trimmed, so the chart being conservative there is reasonable. We use its lower number.

Height changes the slice, not the count

Serving charts are footprint charts. The number of slices comes from the top of the cake, not from its volume, and the chart says so in a footnote almost nobody quotes: a cake anywhere from 3 to 6 inches tall, baked in the same pan, yields the same number of servings, because the cutting pattern does not change. A taller tier gives you a taller slice, not more of them.

There is one hard edge in that rule. A cake under 3 inches tall yields half the printed servings. So a single unfilled layer in a 9 by 13 pan is not a 50 serving cake, it is a 25 serving cake, and this is where a lot of home bakers get caught out. The standard tier behind every number on the chart is 4 inches: two layers with filling between them. If your recipe fills the pan differently, the pan size converter is the tool for that half of the problem, and the recipe scaler handles the batter.

Tiers, ledges, and the tier nobody eats

Tiers step down by 2, 3, or 4 inches. That step is what gives the upper tier a ledge to sit on and the cake its profile: a 2 inch step leaves a 1 inch ledge and reads as a column, a 4 inch step reads as a wedding cake in a film. The serving count follows the step you choose rather than the other way around, which is why 12, 9, 6 and 12, 10, 8 look similar and serve 97 and 117.

Two things worth knowing before you order. First, the top tier is usually not eaten. Freezing it for the first anniversary is a common tradition, and every published serving chart counts it anyway. On the 12, 9, 6 example that is 12 servings of the 97 you were quoted, and it is the single most common reason a correctly quoted cake runs out. Second, a dummy tier is a completely legitimate way to buy height. A polystyrene form iced exactly like the rest costs a fraction of a real tier and photographs identically. Nobody at the reception can tell, and you are not paying for cake that goes home in a bin bag. Ask for it by name and no decent bakery will blink.

Cutting method, sheet cakes, and the honest caveats

The charts assume the bakery's cutting method, done by someone who has done it before, with a long thin knife wiped between cuts. Cut a round cake into wedges at home and you will get roughly half the servings the chart promises, because a wedge wastes the middle. That is not the chart being wrong. It is the chart describing a different job.

Which brings up the trick every caterer knows and few customers hear: a sheet cake serves far more per dollar than a tier does. Nobody is stacking it, doweling it, or finishing its sides, so the labor that makes a tiered cake expensive simply is not there. This is why so many receptions pair a small display cake out front with plain sheet cakes cut in the kitchen, in the same flavors, plated where nobody can see. It is not cheating. It is how large events have been fed for decades, and it is worth asking your bakery to quote both ways.

Finally, the honest part. Bakery charts differ, and the bakery's own chart is the one that governs what you are buying. One widely used alternative chart cuts slices at 1 by 2.5 inches instead of 1 by 2, which puts a 9 inch round at 22 servings where the mainstream chart says 32: a 31 percent difference between two charts that are both trying to be honest. Neither is lying. They made different assumptions about how big a piece of cake should be. How many people does a 10 inch round cake serve?

38 if it is cut into wedding slices of 1 inch by 2 inches, and 25 if it is cut into party slices of 1.5 inches by 2 inches. Both are standard. That single question is why this page exists: a 10 inch round is 78.54 square inches of cake face, and how many people it feeds depends entirely on how wide the knife goes. Assume the smaller number if you do not know who is cutting.

What is the difference between a wedding slice and a party slice?

Half an inch of width, and about a third of your servings. A wedding slice is 1 inch by 2 inches across the face of the cake, a party slice is 1.5 inches by 2 inches, and both are cut through the full height of the tier. The wedding size is smaller because cake follows a full dinner and usually shares the table with other desserts. On a three tier 12, 9 and 6 inch cake the difference is 97 servings against 65.

How big a cake do I need for 100 guests?

A three tier round cake of 12, 10 and 6 inch tiers serves 105 wedding slices, which covers 100 with a small margin. If you are cutting party slices you need considerably more cake, or you pair a smaller display cake with a sheet cake in the kitchen. And if you plan to freeze the top tier, size up: that tier is counted in every published chart and eaten by nobody.

How many servings in a 9 by 13 sheet cake?

50 wedding slices or 36 party slices, if it is a two layer cake about 4 inches tall. A single unfilled layer under 3 inches tall yields half that, because the serving charts count footprint and then halve for short cakes. This is the most common surprise for home bakers, who reasonably assume one layer of a 9 by 13 is a 50 serving cake.

Does a taller cake serve more people?

No, and this catches almost everyone. Serving counts come from the top of the cake, not its volume. The industry chart states that a cake anywhere from 3 to 6 inches tall in the same pan yields the same number of servings, because the cutting pattern does not change. A taller tier gives you a taller slice. The one exception is at the bottom: a cake under 3 inches tall yields half.

Should I count the top tier of a wedding cake?

Only if you are going to eat it. Freezing the top tier for the first anniversary is a common tradition, and every published serving chart counts that tier anyway. On a 12, 9 and 6 inch cake the top tier is 12 of the 97 servings you were quoted, so the cake actually feeds 85. This is the single most common reason a correctly quoted cake runs out on the day.

Why do bakery cake serving charts disagree with each other?

Because they made different assumptions about how big a piece of cake should be. The mainstream chart cuts at 1 inch by 2 inches and puts a 9 inch round at 32 servings. A widely used alternative cuts at 1 inch by 2.5 inches and puts the same cake at 22, a 31 percent gap. Neither is lying. When you are buying, the bakery's own chart is the one that governs, so ask which slice size their number assumes.

Is it cheaper to serve a sheet cake instead of more tiers?

Much cheaper, and it is standard practice at large receptions. Nobody stacks, dowels, or finishes the sides of a sheet cake, so the labor that makes a tiered cake expensive is simply not there. A 12 by 18 inch sheet yields 98 wedding slices. Many venues put a small decorated cake out front for the photographs and cut plain sheets in the same flavors in the kitchen, and no guest can tell.
